It's Saturday...College Football...Can I get a ROLL TIDE? Oh well, whoever you are pulling for, you'll wanna watch the game with great friends, you will need some great, healthy food (or as healthy as possible)!
Let's get this party started :)
Healthier Hot wings
1 lb chicken wings (cut off tip and discard , cut at joint into 2 pieces)
1 tablespoon cayenne pepper
1 teaspoon red pepper flakes
1 tablespoon salt
1/2 cup Louisiana hot sauce
Fill a large pot half way with water and then add the first 4 ingredients.
Bring water mixture and wings to a boil and then boil for 15 minutes.
Transfer wings to an oven safe container coated with cooking spray. Bake wings on "Broil" (high) for 15 minutes on each side.(For crispier wings, cook longer on each side, maybe 20 minutes per side).
While waiting for wings, combine the Hot Sauce and Margarine in a microwave safe container and cook in microwave for 2 minutes or until melted. (You can cook the sauce longer for a thicker sauce).
When wings are done, shake 'em up with the sauce and enjoy!
1 can (14-19 ounces) no-salt black beans, rinsed and drained
1 teaspoon dried onion flakes
8 whole wheat tortillas
2 cups shredded 2% Colby or Monterey jack cheese
1 cup salsa
1/2 cup fat-free sour cream
Place the beans and onion flakes in a small saucepan over low heat and cook for 5 minutes, or until warm. Mash the beans with a spoon. Keep warm.
Meanwhile, heat a large nonstick skillet coated with cooking spray over medium heat. Place 1 tortilla in the pan and sprinkle with 1/4 cup of the cheese. Cook for 2 minutes, or until the cheese melts. Spoon one-quarter of the bean mixture on top and sprinkle with 1/4 cup cheese. Top with another tortilla. Carefully turn the quesadilla and cook for 2 minutes, or until browned. Repeat to make a total of 4 quesadillas. Serve with the salsa and sour cream!
1 can of tomatoes with green chilies (14.5 oz can)
1 can whole peeled tomatoes (14.5 oz)
¼ cup of Onion (White or Yellow will work)
1Tbsp 2 tsp Jalapenos (use canned and diced so you don’t have to chop)
2 gloves of garlic (minced)
½ cup of cilantro
½ tsp of cumin
Salt and pepper to taste
In a food processor place garlic, jalapenos and onions and pulse for a couple of seconds. Then you want to add everything else; tomatoes with green chilies, whole peeled tomatoes with juice, cilantro, cumin and salt and pepper. Pulse until everything is blended together. Transfer to a covered container and place in the fridge for up to an hour or longer.
1 (12 ounce) package corn tortillas
1 tablespoon oil
3 tablespoons of lime juice
1 teaspoon cumin
1 teaspoon chili powder
Cut each tortilla into 8 wedges and place in a single layer on cooking sheet (s).
Combine oil and lime juice in a mister and spray each wedge to slightly moisten.
Combine cumin and chili powder and sprinkle on wedges.
Bake 7 minutes at 350°F, rotate pan (s) and bake approximately 7 minutes more, until crisp but not brown
Okay, now that we have the food out of the way...let's get down to business!
