Garlic And Herb Chicken Fajitas
24 ounces chicken breasts, boneless/skinless
20 I Can't Believe It's Not Butter Original sprays
1/2 teaspoon salt
1/4 teaspoon ground cumin
1 clove of garlic (I use more)
2 tablespoons cilantro, fresh
1 large raw onion
2 large, fresh bell peppers (red, green)
8 soft taco shells ( I use whole grain tortillas)
Thinly slice chicken. Finely chop the garlic, chop the cilantro, thinly slice the onion and bell peppers. In a medium, spray chicken 10 times with the I Can't Believe It's Not Butter Original spray. Sprinkle with salt, cumin, and garlic, toss to coat. In large non-stick skillet, cook chicken over medium high heat, stirring occasionally (5 mins or until chicken is cooked thoroughly). Stir in cilantro. Remove chicken and keep warm. In medium bowl spray onion and peppers 10 times with the I Can't Believe It's Not Butter Original spray, toss to coat. In same preheated skillet, cook vegetables over medium high heat, stirring occasionally (5 mins or until tender-crisp). Serve chicken in warm tortillas, top with low-fat cheese and low-fat sour cream.
And who can have fajitas without Margaritas :) This is for special occasions and is really not recommended on any diet! But once in a while won't hurt ♥
Low Calorie Margarita
1tub Crystal Light lemon-lime drink mix
2 cups water( or you can use 2 cups LIGHT Minute maid lemonade in a carton instead of the drink mix and water.)
Juice of one lime
8 oz. tequila
6 oz. Grand Marnier
4 oz. Presidente Mexican Brandy
Put all ingredients into blender and blend. add ice. Garnish with a wedge of lime.
CAUTION...This makes about 8 servings :)
